    High Energy with High Fiber is a two hour, three module course designed to educate child care providers on simple and cost effective ways to include more fiber in their meal times. Course modules include reading content, activities, and short quizzes. Topics discussed range from why our bodies need fiber, the types of dietary fiber in food, specific foods that carry such fiber, and meal recipes that increase the fiber intake in the daily routine. Special attention is paid to the issue of gluten, and finding gluten-free methods of eating the right amounts of fiber.
